There's no reason why we can't enjoy a healthy dessert and not feel guilty afterwards. All it takes is a little creativity to make your favorite recipes a little healthier. One good way is to add fiber to your dessert. Fiber will aid in lowering the glycemic load on the food you eat.
Some excellent sources of fiber which can be added easily to cakes and cookies is beans, wheat germ, ground flax seed and oat bran.
Black Bean Brownies Recipe
1/4 cup vegetable oil3/4 cup organic brown sugar
1 teaspoon vanilla extract
2 eggs
1/2 cup whole wheat flour
1/3 cup unsweetened cocoa powder
1/4 teaspoon baking powder
1/4 teaspoon salt
1/2 cup chopped almonds
1 can organic black beans, rinsed and drained
Preheat oven to 350 degrees F. Grease a 9x9 inch baking pan. In a medium bowl, mix together the oil, sugar, and vanilla. Beat in eggs. Combine flour, cocoa, baking powder, and salt, stir into the egg mixture until well blended. Stir in almonds and black beans. Spread the batter into pan.
Bake for 20 to 25 minutes. Let cool before eating.
